Complete Kitchen Reno - advice?

The knife is by a guy who calls his company “Your Last Knife”. Had it for years.
Australian guy who does all kinds of knives custom. He uses a lot of native wood and acrylic techniques to make the handles and will make you anything you want.
Good knives. I spoke with him about doing the cleaver for me, which he said he could, but he said that I would be equally better off just getting the cheapo Kiwi brand from the local Asian grocer. He was prepared to leave money on the table for that one!

Well, personally I have always found that the balance of a knife is an individual preference.
But if you’re asking about overall general balance, I think they are very good across the spectrum.
They aren’t overly heavy, just right for me. They aren’t like the super light Japanese style, but nor are they the really heavy ones like my old Wusthof.
The steel is very good, solid and hard. They do like being sharp and well honed but they won’t get blunt quickly unless you are misusing them.
