Tonight's dinner will be gazpacho! It's in the fridge chilling now. All that's not from the garden was the sherry vinegar, olive oil, and salt!

Update - I also made another batch of that chana dal/freekeh salad, when I was cutting up all those tomatoes, and other things. The gazpacho didn't really chill fast enough, so that was a good thing to have as backup. I make that salad a lot in the summer, and lidl had a sale on Greek feta recently, and I stocked up on it, for this salad.

Chuck roast and short rib birria tacos with Oaxaca cheese, finely chopped onion, cilantro, and lime juice. Side slaw of chayote squash, avocado, naval orange supremes/segments, a little bit of jalapeno, and a dressing of honey, sherry vinegar, and the juice that came out of the orange while I was segmenting it.

Just not feelin' the love to cook linner (late lunch/early dinner), so I went up to our favorite Asian joint here in Cowboyville Arizona for take out.

We'll share: Cucumber Maki Sushi, Salmon (and yes, it is raw) Maki Sushi, Mixed Veggies with Beef and an upsell to Lo Mein. This make another meal for us, forsure!
 
Pizza night here for us. DiGiorno pizzas were on sale at Kroger this week (with digital coupon) for $3.99 each. So I grabbed a few of those. My son is having the Ultimate Pepperoni and I'm having a Supreme (with the pepperoni picked off, since I do not like it).

Good amount of toppings. Was surprised by that. Normally I add extra toppings of my own, such as onions and bell peppers, to frozen pizzas. But I won't have to add anything this time.
