Help with Chicken Noodle Soup

I generally stick to aromatic veggies for stocks/broths. Onions, carrots and other root veggies, celery, bell peppers. Mirepoix and the Cajun Trinity. Stocks/broths are not food recycling bins. Like Taxi, I would not use corn cobs and broccoli stems.

I am curious as to why you say Mirepoix, which is onions, carrots, and celery, after just having said onions, carrots, and celery. 🤔🤔🤔
 
Ok. I gave it a try. I made a few mistakes, but it was pretty good even so. So, I'll probably try again.

The biggest mistake was too much pasta. The next was adding the potatoes with the carrots. By the time the carrots were edible, the potatoes were pretty much mush.

Is there a really good chicken soup recipe for a kitchen klutz that someone can provide a link for?

I use the America's test kitchen pressure cooker chicken noodle soup. it is 100% legit. and fast.
