I found a recipe that uses lemon cake mix and Cool Whip to make cookies, sprinkled with powdered sugar before they're baked. I remembered the cake mix but forgot the Cool Whip, so I need to get that tomorrow. My neighbor gave me a slew of blueberries she picked from her bushes so when I make the cookies, I'm going to add the blueberries, if there's any left that I haven't eaten yet. I should be making the cookies in the next day or so. I'll let y'all know how they came out.
 
I will tomorrow. I ended up not getting the Cool Whip until yesterday in the middle of a 90° day. That about finished me for the day because the store had no electric carts which meant I had to hobble wrapped around a shopping cart and then I waited in line in my hot car at McDonald's for about 30 minutes. I'm not very bright sometimes. Then today I ended up sleeping for 10 hours since it finally cooled down, walked around my yard to see wildflowers and cleaned the kitchen. Now if I can just get some elf to clean my floors...

Anyway, tomorrow there is nothing on the horizon that needs to be done (except everlasting weeding) and I want to make cookies then. If I wait too long, the blueberries will mold.
 
I mixed up the dough tonight because it's supposed to chill for two hours. Mine's gonna chill overnight.

I already ran into a problem. The recipe calls for 14.2 oz of Cool Whip. Cool Whip in my part of the world only comes in 8oz and 16 oz. Silly me, I didn't check the recipe before I went shopping or I'd have got the 16oz and eaten a couple tablespoons first. As it is, I only had 8oz, so I used that and the whole box of lemon cake mix.

It made for a stiff batter, especially after I added the blueberries, but we will see what we will see. You know, depending on how good this is, I may make this again but with chocolate cake mix.

Anyway, I'll make these tomorrow and let you know how they taste.
 
Too late. Plus I don't have a stand mixer. I also don't have any Crisco. LOL

I just finished making them. I'll give you guys a link to the recipe and I might try them with chocolate cake mix, but these cookies are just not...what I expected.

First of all, I can't find my scoop. So I had the pleasure of rolling the dough into balls, which reminded me again of why I don't like wasting time to make cookies when I could be staring at the walls designing dollhouses in my mind.

The dough was the stickiest thing I ever saw. I coated my hands in water, I coated my hands in powdered sugar, I was going to coat my hands in oil when I considered tossing the dough. Anyway, 2 dozen cookies later, I'm a little underwhelmed.

The dough tasted nice and lemony, but the finished cookie tasted more of blueberries than anything else and that's on me because I added them to the dough. They're chewier than I though and more cake like. And maybe because I didn't use enough Cool Whip, they didn't have the crackling like they do in the recipe's picture.

You're supposed to roll them in powdered sugar before you bake them, but by the second batch, I just put them on the cookie sheet and threw powdered sugar over the tops. Mine of course, flattened out and taking them off the cookie sheet resulted in a couple smushed cookies. The recipe says bake them 10 minutes and I had to bake mine 20 minutes. It could be I made mine too large. Who knows.

I'll eat them, no problem, but when I say I wouldn't share them it's because I don't think they're that good, not because I'm greedy. Well, OK, I am, but that's not the reason. LOL

Anyway, here's the recipe and good luck to anyone wanting to try it. Let me know how you did and what I did wrong.
