What have you had for breakfast lately?

This morning I made a delicious omelette, with some of that caponata folded into the middle of it - that's it! I just spread some of the caponata on half of it, after the eggs were almost set, put a lid on it, and set it to the lowest heat, and waited maybe 5 minutes, until the caponata was heated, and eggs were completely set, then turned it onto the plate.
 
Fresh peaches diced in fermented rolled 9 grain flakes, walnuts, flax and chia w/wheat germ, honey.
 
Egg bite with onions, spinach, mushrooms, Swiss. Cantaloupe. Ciabatta.

Made farmers cheese the other day. It came out as good as the one my mother used to make. Some kind of accident, it never comes out that good. I like to mix with some jam/jelly and eat just like that with a cup of tea for breakfast.
 
Craig gets an allowance each month through his Medicare plan. It's a use it or lose it type thing, doesn't roll over. So, I try to use at least part of it on pantry items each month. We were out of oatmeal so I ordered that, plus a few other things. Holy moly, it's huge. We'll never get that used up before it goes stale since we only use it for meatloaf and occasionally oatmeal cookies. So, I decided to make overnight oatmeal since I had never tried it before.

Peanut butter and banana overnight oatmeal.

If you have a Vacuum sealer, oatmeal (and many other flours and grains) will store much better with that. I put 4 cups of a lot of things in vacuum bags, then when a quart jar is empty on the shelves, refill that, then rinse the bag out, and let it dry.

I had some of that creole dish I made for dinner last night, reheated for breakfast.

Too much trouble to drag out the vacuum sealer for something that's free to begin with and inexpensive even at grocery if we have to buy.

I have been cooking for a very long time you know...
 
I use that Foodsaver more than most people I know, because I learned, early on with my first one (lasted over 15 years) how to keep from having to "drag it out", when I need it - I simply slide it out...then slide it back in. Have to have the counter space in the first place for the stand, and we don't since downsizing.

Overnight oats! There are many recipes for them. I've wanted to make the carrot cake overnight oats but I haven't made it yet.
We eat oats or 9 grain flakes 3 out of 5 days, both of us. Buy it in 50 lbs bags and keep it in 5 gallon pails sealed in the cool basement.

I was just out in the garden picking kale and I must not have eaten enough or maybe I'm not drinking enough water. I got dizzy. Decided to come in and rest for a bit, and then I read your post and decided I would quick make some cold oats. I didn't have cherries but I have canned cranberries w/o sugar, so I made cold honey cranberry oats w/flax and chia seeds. It was very satisfying, and tasty.

This morning mr bliss picked about a cup of raspberries, they are almost done giving us more. He mentioned I could make some raspberry nice-cream (w/bananas) but then he put the whole cup onto his rolled oats. :DRaspberry oats are tasty too.
