On Sunday I made biscuits for breakfast and then some mini-loaf banana bread. Sorry no pictures, it was one of those days.
 
Made a batch of corn muffins today.

Mexican chocolate cookies came up in my Facebook memories the other day, so I decided to make them again on this rainy day. So good. Next time I need to experiment with cayenne powder to get a little spicy flavor in there.

Busy baking day today. Made a loaf of sandwich bread and a skillet of dinner rolls. Also prepped three pizzas worth of dough for future use.

This past week I baked a banana nut bread and mini pineapple upside down cakes from a recipe on Dessert for Two. Those were so good - and rich. We should have split one and saved the second one for the next day.

My honey bun, Himself, fixed my bread machine! [emoji813] Opened it up and poked at a couple of wires...but gave me credit. He said the thing knew it was in trouble as soon as I took it down the basement and set it on his workbench. [emoji38]

I did 2 loaves of sourdough sandwich bread.

5x9 White Bread Plus from Joy of Cooking

I clipped an empty 5x9 pan on for the pan rise - got cute little 'seam ears' from the oven spring



- which (sigh) I had to break off to depan....they curled around the pan edges & were holding the loaf 'in situ'
 
heehee. it was actually a bit of unintended luck. I turn on the oven light, and use the oven for proofing.

first proof in mixing bowl; it developed a tiny bit of skin - so after punching down and shaping, I used a second pan for a "lid"
one advantage of the JOC recipe is starting in a cold oven - so after the 2nd proof I turned on the oven to 400'F for 15 minutes, then pulled the cover pan, decrease heat to 375'F and bake 25 mins.

turned out a nice loaf - I'll be repeating the trick....

And you get some nice trimmings for the baker's treat! [emoji39]
 
Made a batch of Italian sub rolls using the recipe from King Arthur Flour. They did not come out like the photo. They look like ciabatta rolls. Oh well, taste will tell.

In honor of Mothers Day, I made a lemon pudding cake for SO. That will be our dessert tonight. I'll post a photo later when we've cut into it. I'm hoping it will look more interesting if you can see th pudding part of the cake.
