I made up and stashed the dough for copycat
Big Island Candies Macadamia Nut Shortbread Cookies.
LOVE these cookies, they're special, to me anyways.

I let the dough rest overnight and then bake them off, let them cool and dip in Chocolate.
Since it's Christmas and these will be gifts for my Neighborhood Gal Pals,
I'm making the trio, plain, Milk and Dark chocolate cookies.
I found the cutest treat boxes at Walmart.
I think presentation is important as well as taste.

To me, this recipe tastes just like the cookies in the shop.
Now I've just got to figure out how to wrap each cookie
individually in cellophane like Big Island Candies :LOL:

DH was watching me this afternoon and said,
"that's far too much work! Why don't you just
buy them?"

The S&H is almost as much as the cookies!! :ohmy:
No, I'll make them myself thanks, I don't mind.
I only make these once a year.
Mac Nuts ain't cheap either!
I got them on sale for $15.99/lb. the original price was
$25.99/lb.

i had a supervisor from Lockheed missiles and space that I became good friends with. He lived in El Cajon, Ca. When I too lived there, I visited him and his wife. They were gracious and good people, with two giant macadamia nut trees in their back yard. These trees dropped a thousand nuts onto the ground every year. They were rarely gathered or used. My friend used to let me collect them for free. Oh for the good old days.:) Sadly, my friend is no longer a living soul. He is missed.

That sounds really good. Would you share the recipe? And I'd love to see a photo of the finished product. I just gave a bag of goodies to my nurse. I didn't think to take a picture, but it was a small gift box filled with cookies and a small loaf pan with a loaf of ginger-orange-honey bread, inside a gift bag decorated with a piece of holiday tissue paper.

I can never seem to cut the cookies evenly, but y'know,
a professional chef-y friend of mine once told me, you
really don't want your product to look perfect,
otherwise it doesn't look homemade... folks will
think that you bought them rather than took
the time and effort to make something from
your heart and kitchen.

I picked out the super imperfect cookies and,
WE ATE `EM! :LOL: :yum:

I dipped 16 each in Milk Chocolate, Dark Chocolate and then
naked cookies as well. The leftover bits of chocolate are
not wasted my friend! I pored them into ramekins,
let them firm back up and stash them away for re-use.

I'll package them up tomorrow and gift them to my
pals. I'll show how it all came out later.

MsM, I have a few cook's tips should you decide to make these cookies:

1) use light colored sheet pans, not the dark-non stick ones
2) use a silpat as to not over brown the bottoms
3) leave the dough logs to rest over night in the `fridge
4) when ready to slice cookies, let them come a bit to room temp, not all the way, otherwise the dough would be too soft, but firm dough did cut well:wacko:
5) DO cut the dough logs into the recipes suggestion of 24 cookies ... I made a double batch and got 55 cookies, a little too thin, IMHO
 
Desperately needed a snack tonight so i made a batch of pecan cookie balls.

I needed a Christmas-worthy dessert for tomorrow's Christmas Dinner, so I chose to make my Aunt's recipe for apple pie.

Fresh out of the oven. Not sure if you can see the steam rising from the center hole.
 
1. Gluten/nut free chocolate chip cookies
2. Date filled cookies
3. Hamentashen
4. French country bread5. for tomorrow, Christmas dinner, Roulade
5.white bead with sunflower seeds

I'd love to make a pie, but no counter space to roll out a proper pie crust.:(

I made rolls for dinner last night and tonight. I put rosemary and thyme in the dough and brushed the tops with melted butter and Penzeys Justice and kosher salt. 20201224_192622.jpg
 
English Muffins today..not sure if that is baking as they are done on the flat top..GF wants eggs benedict tomorrow..we've just had some with jam and butter...

I didn't use my Mom's tried and true recipe for her favorite date filled cookies, as the recipe includes rolled oats, which i'm supposed to avoid. So I used her date filling, and an online recipe from online that looked like a date-filled sugar cookie. T dough was too loose, butI made them anyway. When baked, they completely lost their shape and spread to fill the baking sheet. They tasted good, but were too soft, even when cooled. Like I sad though, they still taste good, and so will get eaten, only maybe with a spoon.:LOL: They might be a good desert to put in a bowl with some whipped cream. or served hot with vanilla ice cream. We shall see,
