Here's a yummy soup to try:
1 medium onion, diced
2 pounds of chopped zucchini
2 cups of water or chicken stock
salt, pepper, ground cumin to taste
1/4 cup or so cream cheese
Add all the ingredients except the cream cheese and bring to a boil. Simmer covered for about 15 minutes or so, then puree. Add the cream cheese and allow it to melt throughout the soup.
