Greek meatball pitas with feta, tzatziki, and a tomato plus red and green onion salad. Everything homemade but the feta.

I made a Danish dish: hakket (chopped) cordon bleu. It was ground pork stuffed with ham and cheese and then dipped in beaten egg and bread crumbs before frying. I served that with some smallish potatoes (According to the store, they were "creamer potatoes". I don't think so. They were bigger than grelots, new potatoes.) and a leafy salad. I ate too much.

I cut one of them open for the pix to show the stuff inside, but the ham and the cheese don't show much. You can just barely make out a bit of the melting cheese.

Cook’s Notes:

Meal was absolutely delicious, every element was beautifully cooked and balanced with each other.

The salmon was so good, so fresh and wonderfully meaty.

I’m so happy with this dish, it was delightful 🫠
