Finally got around to making Cheese & Onion Enchiladas. They go into the oven, soon. We'll have them with some Restaurant Style rice and freezer Refried beans. Yum!

It was created mainly for the Japanese navy and became a very popular home cooked staple.
To me, it looks similar to a katsu but without the sauce.

I roasted some Italian sausage. I nuked some brown basmati rice. I made a salad out of romaine lettuce, upland cress, and some sliced Lebanese cucumber. I put tamari and LGM chile crisp on the rice. I made a new batch of vinaigrette. Easy, but tasty supper.
I made a real supper tonight after easy meals Friday (Naan bread pizzas) and Saturday (pan fried onions, hot dogs, and potatoes). It's been a long time since I made stuffed pork chops; Himself said that they were delicious. Served with buttered green beans. Mini éclairs from Aldi for dessert.
