PART 1: (Part 2
Tonight, I made one of our favorite meals…Scallops with Mushrooms & Leeks. Although, I had to change it up a bit. It is a recipe from an old “Irish Recipes” booklet. I started making it years ago and over time, I’ve changed it up a bit. For one, I serve it over linguini. It just seems suited to pasta. But today, I had to change up a few other things…like switching the mushrooms out for zucchini. Not the same, but it works? It was good, after a tough day. Yesterday was DH’s b’day…and most friends and family did not take notice. Including his own mother. Sigh. Age or just being ornery, who knows?

Ginny, scallops, mushrooms, leeks - that must be a recipe made in heaven!

I had my last helping of my beef stew from the freezer. The taste was OK but some parts were mushy? Don't know what happened as the first 3 meals were very enjoyable. The date on the bag was a very recent Oct 12th, so it's not like I found something from a couple of years ago, LOL.
 
I went to physiotherapy yesterday. I walked there. It was just over half a kilometre. By the time the physio was over, I was all pooped out. I took a taxi home. I considered making something easy, but it didn't seem wise. So I ordered from one of our favourite Italian restos. I had a Cæsar salad with grilled chicken. It was good, but I make a better Cæsar salad. It came with two little buns that were still warm.

I wanted to get the bag of frozen hashbrowns out of my freezer, so I decided to make potato cheese bacon soup. But then I forgot to take the bacon out of the freezer. Then I realized that by the time the bacon had thawed and been cooked, I would have been making soup at midnight. Instead I took the ham I hadn't been able to fit into the freeze and used that. So last night it was potato cheese ham soup.

Did I miss something? @caseydog why are you in Houston gain?

My mom. She's in an assisted living community, like your mom. But, my mom is moving beyond that. Today, she didn't know who I was when I walked in the door. I had to tell her multiple times that I am her son, and that her husband was my father, and that my sister is her daughter.

I have been in Houston for half of the last month, trying to deal with that.
