Cooking well for 1

After 1 month living in a dome tent with just a gas stove and charcoal for cooking, I ordered a 12 V fridge.
Life saver :)
These days it's full solar

Back to meals,
I generally use 1 or 2 pots/pans
Yesterday was lazy pasta.
1 pot, boiling water. Cook pasta till done.
Semi drain.
Back on slow heat add capers(no need to refrigerate) and bit of juice, chili paste (no need to refrigerate) and crack an egg in it.
Stir a bit, taste and done

Eggs here and in Europe don't need refrigeration either. Otherwise just hard boil a bunch of them...

When I make it I sort of wing it by starting with a tomato based pasta sauce or a bottled salsa.
 
Do you have an oven? Because there's a lot of stuff you can cook in an oven. Also, do you do any crock pot cooking? They have these small crock pots now, maybe one quart, that will hold a single chicken breast or a couple pork chops and if you have any access to electricity, that would be a game changer. I'm assuming the guys working on your house can use their electric tools?

If you don't have a fridge, a couple bags of ice will keep things cool (not frozen) for a while, too.
For right now no hydro. A propane stove
