I bought some roasted walnut oil and I really like it. So far I've only used it for salad dressing - how else do you use it?
 
It makes an elegant vinaigrette. Keep it in the fridge. It can go rancid pretty quick.
 
Saute some onions & garlic; add a little brown sugar and toasted walnuts - cook just till sugar melts.
Remove from heat and toss in some feta cheese.
Mix with farfalle and walnut oil. Delicious.

Very rich, very delicious. I have a similar recipe to the one above and yes, all that garlic is a good idea. I used less the first time I made it and could hardly taste it. If you're feeling really extravagant, use all walnut oil rather than half olive oil. If you do use olive oil, use a mild-flavoured one so that it doesn't overwhelm the walnut oil. I don't use parsley, as given in this recipe, for the same reason.
 
Mix with a little raspberry vinegar and dress cooked sliced beetroot - season and refrigerate overnight.
