Substitute for Cooking in a Stone Jar!!!

Hi all,

I'm not sure if this is the right forum for this question - please feel free to redirect me to another forum if not.

I'm attempting to make Mrs Beeton's Mushroom Ketchup (see here for the recipe, both original and 'modernised': Mushroom Ketchup Recipe - Mrs Beeton Revisited from The Foody).

My question is, in the recipe it calls for boiling the ingredients at one stage in a stone jar within a larger pot. I don't have a stone jar. Do you think the results would be the same if I put the contents in a smaller metal pot within a larger pot full of boiling water? Not sure why a stone jar is in the original and modernised version so I'm hoping that using a metal pot will do just as well.
