In most recipes, a pinch of salt is asked for, when cooking oatmeal. Why is this?

Well.. makes it taste better....

Actually, I think it helps it from clumping up.

Salt lifts the flavor of anything it's added to. So it works in oatmeal when a pinch is added.

Oatmeal is about as bland as it gets. I toast my oatmeal before cooking it, add salt which brings out a tremendous amount of flavor and the sprinkle with cinnamon and brown sugar when done. The salt makes a real difference. I add salt to everything I cook. It wouldn't taste good without it. My daughter never salts her food when cooking and it all tastes bland and blah.

These responses are right on target. The salt won't make the oatmeal salty, it will just bring out the flavor of the oatmeal and whatever else you add to it.

Salt is often called for in dessert recipes for that very reason. It makes other flavors more pronounced.
