1/2 kilo {1 pound} penne pasta
3 tablespoons extra version olive oil
3 diced cloves garlic
2 med size onions - diced
1/2 teaspoon grounded black pepper ,{fresh if possible}
1/3 cup dry red wine
3/4 cup chopped herbs {parsley and oregano }
almost a cup sliced basil leaves
can crushed tomatoes
8 ounce mushrooms sliced
around 1/2 cup grated parmesan
Start with cooking the Penne according the pack direction , its usually preparing a pot with boiling water, i always like to add a little bit of salt and oil .. 8 minutes cooking not too cooked and not under cooked , make sure they don't stick together by gently stirring maybe twice during the cooking . a
While the pasta is cooking , heat the oil in a large pan , you start by adding the sliced onions, with the pepper and salt {half the amount above} , and cook , Cover your pan till the onions are softened , then after around 7 min we add the Garlic and mushrooms, cover ... and cook for another 5 min , then you add the dry red wine , and cook for another few min , around 3 , with the pan uncovered. a
Put the chopped herbs such as parsley and oregano and season with the rest of your pepper and salt and cook for another 4 min ,at the end we add the tomatoes { we can also use fresh tomatoes by boiling them and then removing the outer layer, and crushing them it will add a nice taste} , then we stir in the basil .... a
Now serving this pasta : transfer the pasta to plates with spooning little bit of souse over the top and off course sprinkle some cheese ! a
I used to put it in the over with a cheese all over till it melts, but for lowering the amount of Calories, its also perfect doing the above. a
Ps- You can add anything you like to this basic penne pasta, you can also remove the mushrooms if you are not a fan of it . ideas for additional yummy things can be little slices of chicken breasts , or little bit of black olives, you can also use tofu . a
