Left over sushi?

How long can I keep left over sushi (home made) that has no raw fish in it?

What will happen to the texture of the rice and any laver used for a roll?
 
BTW...My daughter (9)and I make sushi at home too.
She taught me to use a quart size ziplock bag instead of the rolling mat.Works fine for round rolls.
 
You may find the rice a bit crunchy. It doesn't deal well with refrigeration.

The biggest problem I'm finding is the seaweed gets chewy. The issue here is that my DH likes sushi and occasionally I make it. He wants to take some to work for lunch however and it would be made the night before. He has asked if I can make enough for two days worth of lunches and I am skeptical about how it will hold up.
