I believe Escoffier and Pellaprat are books for very experienced chefs, to help cooking or to put a nice reception dinner together, but also to generate ideas about new dishes and combinations. I got interested in French cuisine since I believe is the best (with Chinese following very close), for flavors, tecnique and diversity. Let me know what do you like to cook.
