Made this for the guys last night and the loved it. No pics sorry.
Fire House Shrimp Scampi
1 2lb bag of frozen easy peal shrimp (36-44 count)
2 1lb boxes of linguini
1/2 head of garlic chopped
3 tbs Old Bay seasoning (I mixed my own)
1/2 tsp crushed red pepper
1/2 pint of whipping cream
1 bunch of green onions diced
1 lg red pepper diced
1/2 cup EVOO
1 stick butter
Parmesan cheese
Directions:
Cook the linguini according to the package, don’t rinse.
Peal the shrimp and reserve the shells and tails in a small stock pot with water. Cook shells and tails with 1 tbs old bay until you have a nice stock. Strain the stock and reserve.
Melt the butter and EVOO and sauté the garlic. Add the onions and pepper until tender. Add the shrimp and 2 tbs old bay, about 2 cups of the shrimp stock until the shrimp turns pink. Add the whipping cream and linguini and heat through. Serve with parmesan cheese.
Serves 6 firefighters or 8 civilians.
