Cooking Canned (and Preserved) Bounty 2023

I could not wait to try to make fried green tomatoes with the green tomatoes that I canned this year. I saw the canning idea on one of the extension office's websites under Canned Slices. I opened the jar and drained the slices before placing them on paper towel to blot them dry. Then I coated them with seasoned flour (salt & pepper) before I dipped them in buttermilk and dredged them with a mix of seasoned flour and panko crumbs. Into hot grease and they cooked up fast. Very crispy, very fresh. I am over the moon how they turned out. I wanted to share since some here are coming to the end of their season, but also I cannot wait to hear what others will cook using their bounty!
