After all the discussion of eggplant parmesan last week I got a craving, so I picked up 2 really nice medium sized eggplant at the farmer's stand.

I will make of a big pan of that and have pasta and salad with it. Oh, and some garlic bread too.
 
Sounds really good, Dave.

We'll be having leftover Chinese pepper steak and rice for dinner. (I had leftover hot and sour soup for lunch).
 
Traditional Chicken Fried Steak
Creamed potatoes with bacon, butter, and cream (I'm being very bad).
Elvis Presley's Favorite Pound Cake with sliced fresh strawberrys.
Mrs. .40 is in charge of the veggie selection.

Decisions, Decisions....all your ideas sound so good I don't know who's house to go to. Maybe I will just have to pop in for a sampling from each of you! :LOL:

Seriously, I have no idea. Both Dad and I are slightly under the weather (nothing serious) so it might be some kind of soup. DH is taking the last of the leftover fried rice and some chicken thighs.
 
Dinner will be pasta with roasted tomato and red pepper sauce. I made a small batch today.

For lunch I used some of the sauce with some fried Reineta (pomfret).

Got a beef stew simmering right now with all the good stuff from the garden in it. I'll thicken it when I get home from yoga class and we'll have that and fresh buns as our entree. A big green salad to go with and we're done.
 
Chicken Cacciatore on the menu tonight, served over cheese baked polenta.
We'll have a green salad too.


It's so dang hot outside, it doesn't sound like a hot weather menu, but I thank my stars for AC. Maybe ice cream for desert.

Fettuccine with Roasted Red Pepper and Tomato sauce

First red peppers, onion, garlic and tomatoes were roasted in the oven. Then blended with olive oil and a touch of water. Seasoned with oregano, salt, pepper and Tabasco.

Grilled kielbasa, grilled zuccini and corn on the cob. Sounds nutricious doesn't it? Nope, hubby jsut sent me to the store for a candy bar. Hmmmmm.
 
I went foraging and found chicken hindquarters for 99 cents a pound, marked down ground beef and marked down thin, cross rib steaks.

The chicken is in the slow-cooker with onions, garlic, thyme, S&P. Figure out what to do with that later.

I started a chili with the ground beef, for later this week, for Shrek...he couldn't wait, already had a bowl. I didn't have any canned pintos, he decided to try black-eyed peas in it. He says it's good.

What I had planned for tonight http://www.discusscooking.com/forums/f14/braci-ole-67131.html#post922477 I have the filling done and cooling off. Now to pound out my thin steaks some more. I'll finish them off tonight when it cools down, since we won't be eating them tonight.

I decided that I wanted a special dinner tonight - just because. Filet Mignon smothered in caramelized onions and blue cheese, garlic mashed potatoes, asparagus with thyme and a glass of merlot. Yum!!
 
ratatouille (all local fresh veg), brown rice with crimini mushrooms (local shrooms) and braised red snapper drugere. really nice!
 
I made some chicken mulligatawny with jasmine rice. It was so yummy. I feel kind of embarrased when I can't stop eating my own food. Like it's being egotistic or something! lol It really did turn out beautifully though.
