TUNA & ARTICHOKE GRILLER
4 Artichokes, chopped (canned, water packed, drained)
1 can Tuna (water pack, 6 oz., drained)
5 or 6 fresh Basil Leaves, chopped
A Few Thin Slices Red Bell Pepper, chopped
1 tsp. Capers, drained
A Few Olives, chopped (any)
2 Tblsp. Mayonnaise
1 Tblsp. Lemon Juice, fresh squeezed
Pinch Ground Pepper
2 French Rolls, split (or other bread like sourdough or hoagie buns)
Olive Oil
Onion, sliced thin
Tomato, sliced thin
Mix Artichokes, Tuna, Bell Pepper, Basil, Capers, Olives, Mayonnaise, Lemon Juice, Pepper.
Brush one side of bread w/Olive Oil.
Layer the plain side of bread w/Tuna mixture, Onion, Tomato
Make Sandwich
Press sandwich gently. Grill Both Sides (oil side on grill)
eat. smile.
