Thin Crust Pizza. Any pointers?

the "spatter reducer" that I have, although it looks like the pizza screen, has a plastic handle for use on the stove top. It won't go in the oven.
 
I don't know. I think it came in frozen. I was a driver so I don't know much. Much of the dough is made elsewhere these days.
When I worked at Pizza Hut (a couple of decades ago) I made all the dough daily before running deliveries. Nothing came in frozen, it was all made in house daily.

My understanding is circa 2007 they changed to frozen to help save on labor. I think the original recipe for pan dough is out there. Not sure when the thin crust came into existence.
