Sesame Peanut Noodles
10 oz. angel hair pasta
1 cup shredded cabbage
1 cup cucumber, seeded and cut in julienne strips
6 Tbsp. soy sauce
4 Tbsp. red wine vinegar
6 Tbsp. peanut butter
2 Tbsp. sugar
2 Tbsp. vegetable oil
1/2 cups scallions, chopped
chili peppers or cayenne to taste
1 Tbsp. minced fresh ginger
2 tsp. minced garlic
2 Tbsp. sesame oil
1/3 cup chopped roasted peanuts
-Cook pasta, rinse and drain
-Saute garlic, ginger, peppers, and scallions in vegetable oil
-Stir in the soy sauce mixture, cook until peanut butter is dissolved, remove from heat. Sprinkle the shredded cabbage and cucumber over the noodles, then top with the soy sauce/scallion mix. Add peanuts and sesame oil, and toss.
