I think it was like a 2 lb. but it might've been less. I didn't weigh it. All I did was hit it with a tiny bit of Cajun/BBQ rub (equal parts Cajun seasoning and brown sugar.) then I smoked it over apple and hickory for about 2 hours until it hit 165. Then I wrapped it, added some apple juice and water, and let it go at 220 F for about 4 hours until it was tender. Then I let it rest 15 minutes. Does the bark look good, or too dark? This is also the first time I used no water in the smoker whatsoever (dry, foiled, water pan, as I usually put some water in the pan) but I think it turned out ok! I'm no BBQ expert yet.
What y'all think?
