I use this Salsa recipe for serving atop steamed fish. it's a nice change from regular salsa.
Pineapple Salsa
1-1/2 cups chopped fresh pineapple
2 medium yellow tomatoes (easily found in grocery stores)
1/2 cup chopped red onion
1/4 cup packed cilantro leaves, finely chopped
1 jalapeño pepper, seeded and finely chopped
1/4 teaspoon kosher salt
Combine the pineapple, chopped yellow tomato, red onion, cilantro, jalapeño, and salt to make salsa. You could add some chopped yellow bell pepper if you like.
