Ms. Mofet's Instant Pot Corned Beef and Cabbage

Prepared using a 6 QT. Instant Pot (I have a Duo and an Ultra)
This is my Tried & True Recipe/Technique/Instructions

3 lb. - 4 lb. flat cut corned beef brisket with seasoning packet
1 tsp. Pickling/Corning Spices (My blend below)
2 Bay leaves
Salt - to taste optional
6 medium red potatoes, washed but unpeeled, quartered
1 small cabbage, cut into 6 wedges
Water

IMPORTANT: Be sure the inner pot is in base unit and gasket/ring is in lid and seated properly before beginning.

Put the contents of the seasoning packet (if provided with corned beef), pickling/corning spices and bay leaves in a large tea ball or in a cheesecloth bundle.

Place tea ball/bundle with spices in bottom of the inner pot.

Cut corned beef in half if necessary to fit in pot.
Place the corned beef (and liquid in pkg. if you wish) in inner pot on top of tea ball.

Add 2 C. - 1 Qt. water to pot (just enough liquid to almost cover meat) and salt if using.

Lock lid on.

Select Manual/Pressure Cook OR Meat/Stew mode.

High Pressure and adjust (+/-) to 1 hr. 15 minutes or up to 90 minutes.

Depending on model:
- Set valve to sealing (Ultra self seals automatically).
- Press Start on Ultra Model.

(Took ≈10 minutes to come to pressure)

When cook cycle is done (beep sounds) allow 10 minutes natural
pressure release (NPR). Then quick release (QR). *SEE NOTE BELOW for sandwiches

When pin drops remove lid.

Corned beef will be very tender. Using two large forks or spoons carefully remove corned beef from the pot.

Select Cancel button.

Slice and cover the corned beef until ready to serve.

Add the potatoes and cabbage to the liquid in the pot.

Lock lid on.

Select Manual/Pressure Cook mode.

High Pressure and adjust (+/-) to 4 minutes.

Depending on model:
- Set valve to sealing (Ultra self seals automatically).
- Press Start on Ultra Model.

(Took ≈10 minutes to come to pressure)

When cook cycle is done (beep sounds) use quick release (QR).

When pin drops remove lid.

Select Cancel button and/or unplug unit.

My corning/pickling spice blend:

Whole Bay Leaves
Whole Allspice
Whole Black Peppercorns (I Use rainbow blend - Telecherry, Malabar, White, Green & Pink Peppercorns)
Whole Coriander Seeds
Whole Mustard Seeds
Crushed red pepper flakes
Whole Juniper Berries - Optional

*NOTE: If you wish to use for making sandwiches: DO NOT release pressure or open the lid. Allow to sit on keep warm for at least 1 1/2 - 2 hours. This will allow meat to firm up a bit and allow you to slice meat without much shredding. Meat will still be warm.
