I have a recipe that calls for some "1 heaped teaspoon jerk seasoning, plus extra for sprinkling". Does anyone have a recipe that is appropriate in that context?
I have made jerk pork an jerk chicken, but that involved making up a marinade / sauce to apply to the meat, not something that could be sprinkled on. I have looked on the intertubes and I don't think powdered cayenne pepper is right. Isn't it supposed to be Scotch bonnets or habaneros in a pinch? Or maybe that would be good in a powdered mix.
