ISO help/advice on canning coleslaw?

I am following a recipe for canning coleslaw. I read the recipe last night, but this morning forgot the sliced veggies had to sit with the salt for 2 hours after mixing. When that 2 hours time is up, it will be right in the middle of making/eating supper. Can it sit for 3 hours in the salt or should I rinse it at 2 hours and let it sit for an hour?
 
I shouldn't think it would make much of a difference. But that being said... I've never done it so I'm just making a guess here. My other thought is that I certainly would not let it go on any longer than that. Hopefully someone will have a better knowledge of this than I.
 
thanks, It is getting close to the time I should rinse it, so maybe I will just do that, put it my strainer and let it sit till I can get to it. (unless someone else chimes in before then).
 
It came out good, so I guess it worked. I rinsed it after the two hours and let it sit in my strainer until I got to it an hour later. I will make this again.
