Grilled cheese made with sour dough bread is my favorite. I add dill pickle slices and use cheddar cheese. Brush both sides with real butter and sprinkle with oregano then brown to perfection.

A few years ago, DH and I were driving to Michigan to visit family and stopped for lunch at a place near Cleveland we had seen on "Diners, Drive-ins and Dives." They specialize in grilled cheese sandwiches. Here's their menu: Melt Bar and Grilled | Menu

I had the Rising Sun. It was a-ma-zing. I want to make it myself.

Interesting menu that gave me a few ideas. It’s funny that there’s only one sandwich (besides that &44 ‘wich) that, by the standards of Discuss Cooking, would classify as grilled cheese! The rest are merely sandwiches. Big, huge, good for three meals sandwiches.
