We had a Mexican fritatta with chorizo, caramelized onions, half of a fresno chili, Jack and Cheddar cheese, with pico de gallo and crema.

I took some leftovers, some from a resto delivery: fried rice, breaded chicken, and a small amount of chow mein and added some bean sprouts and some leftover brown basmati rice and fried it all up. We added a bit of roasted sesame oil and some tamari at the table. That was surprisingly good.
 
Leftovers are always a win-win! Your soup sounds delicious and comforting. If you're ever in the mood to switch things up, you could try pairing it with a homemade pico de gallo recipe for a fresh contrast. It's a great way to add some zing to your meal!
