Ingredients:

• Assorted vegetables (e.g., broccoli, cauliflower, carrots, bell peppers, zucchini, or any of your favorites)

• 1-2 tablespoons of olive oil or cooking spray

• Seasonings of your choice (e.g., salt, pepper, garlic powder, paprika, or herbs like thyme or rosemary)

Instructions:

1. Preheat Your Air Fryer: Start by preheating your air fryer to around 375°F (190°C) for 5 minutes.

2. Prepare the Vegetables:Wash and chop your vegetables into bite-sized pieces. Try to keep them uniform in size for even cooking.
Pat the vegetables dry with a paper towel to remove excess moisture. This helps to achieve a crispy texture.

3. Season the Vegetables:In a large bowl, toss the vegetables with olive oil or lightly coat them with cooking spray. The oil helps to promote browning and crispiness.
Season the vegetables with your choice of seasonings. You can be as creative as you like here. Salt, pepper, and garlic powder are basic options, but feel free to experiment with other herbs and spices to suit your taste.

4. Arrange in the Air Fryer:Place the seasoned vegetables in the air fryer basket in a single layer. Crowding the basket can lead to uneven cooking, so you may need to cook them in batches if you have a lot of veggies.

5. Air Fry:Cook the vegetables at 375°F (190°C) for 10-15 minutes, depending on the type and size of the vegetables. Start checking for doneness around the 10-minute mark. You can shake or flip them halfway through to ensure even cooking.
The vegetables should be tender and have a nice crispy exterior. Adjust the cooking time to your preference for texture.

Needless to say, but will anyways. Also be aware that vegetables of different densities will cook at different rates. Some may take 10 - others 15, etc.
 
I think the most easy vegetable to air fryer would be potato, you can thinly slice it, in wedges or in french fries and add seasoning like butter, garlic powder, salt, chilli flakes and air fry it for 15-20 minutes on 160 C and you are good to go.
