I promised the recipe. Here it is.
Blueberry Butter In The Electric Roaster
Ingredients:
48 pints blueberries
4 lemons
8-12 cups sugar or more to taste
2 quarts low sugar blueberry juice
3 tablespoons Saigon on Vietnamese cinnamon (trust me on this, the choice of cinnamon makes a huge difference and most grocery store carry it.)
2 teaspoons freshly grated nutmeg (again, this makes a big difference.)
Directions:
Wash the blueberries.
Go through the blueberries and pick out the stems or bad ones.
Peel your lemons with a potato peeler and and put in your food processor or blender.
Remove the pith (the white stuff) from the lemon's flesh and throw it way.
Put the flesh in the blender or food processor.
Put the blueberries in batches in the blender or food processor and blend until smooth.
Pour into the electric roaster
Add juice, sugar and spices
Turn your roaster on to 300 uncovered and go to bed.
When you wake up, the fruit should be slightly thickened.
Cook until it's as thick and creamy as you like it or a drop of blueberry butter congeals on a frozen plate and holds it shape.
Blend the mixture with the immersion blender until it's very smooth.
Taste to see if more spice and sugar are needed.
Boiling water bath can in jelly jars for 10 minutes or freeze.
Makes around 30 cups of blueberry butter.
Notes:
*This is not to be a rushed project it will take somewhere between 24-48 hours. But very little of the time is spent preparing the blueberry butter it's mostly the time it's cooking in the electric roaster.
*You may want to start this project just before you go to bed.
