I wasn't sure where to post this so I put it here. Greg, If you want to move it to a better place that would be great. Maybe we need an "Other" section for recipes. This should get you close. I don't really use recipes much. I go by taste. I think it's right.
ZILLA’S Pit Baked Pizza Recipe
Pizza Dough makes 1 - 18" pizza or two small ones
1-1/2 cups all purpose flour
1-1/2 cups bread flour
1 tsp kosher salt
1 tablespoon olive oil
1 tsp yeast dissolved in warm water
1/1/4 cups tepid water
Mix all ingredients till smooth and do not over mix.
Place in a oiled bowl and cover with saran wrap and place in a warm spot till doubled in bulk.
When ready roll or stretch the dough to the desired size.
Place dough on a pizza screen or wooden pizza peel dusted with cornmeal
Cover the top with the desired amount of sauce.
Add toppings.
Sprinkle with oregano.
Place in oven till done 10-15 minutes depending on the temp.
Sauce
Note: Spaghetti sauce and tomato paste will not give you the flavor of pizza sauce
Four large cans of tomato puree or your choice.
Two grated carrots
One head of minced garlic
Pinch oregano
Pinch of basil
½ cup grated onion
Salt
Pepper
simmer for two hours or so to thicken and develop flavor
Adjust seasonings as needed after cooking for an hour.
Cheese
Use low moisture Mozzarella for classic stringy pizza cheese
Or whole milk Mozzarella for a very soft style
Use teaspoon fulls of ricotta for something different
Toppings
Thin sliced onions (lightly Sauteed)
Thin sliced Bell peppers (lightly Sauteed)
Sauteed mushrooms
Pepperoni
Italian sausage (thin sliced and browned)
Sardines in olive oil (very Italian)
Anchovies rinsed well
Sliced olives black or green
Thin sliced tomatoes
Artichoke hearts
Ham
Pineapple slices
Smoked chicken in BBQ sauce
Pulled pork in BBQ sauce
Shrimp small whole and cleaned and shelled

Substitute tomato sauce for Asian Peanut sauce, chicken, julienne carrots and chopped roasted peanuts for Tai Chicken Pizza
