Years ago, I was making a German Chocolate cake. When maKing the traditional frosting recipe, i made a mistake. What resulted was a delectable no-bake cookie. Don't know if I've ever posted this one for you. Here it is, just in time for the Holidays.
Vanilla No-Bake Cookies
1 c Sugar
3 Egg yolks; slightly beaten
¼ cup milk
1 ts Vanilla
1/2 c Butter
1 cup rolled oats
1 1/3 c Coconut
1 cup Chopped pecans
Combine sugar, egg yolks, butter and vanilla. Cook and stir over medium heat until thickened, about 10 minutes. Remove from heat, add coconut and pecans. Drop by tbs. onto parchment paper to cool.
You can also add crushed peppermint to the recip if so desired. I hioe you try this recipe. Oh, and if you add a can of condensed milk, and omit the rolled oats, it becomes cake frosting.
