I have once again tried a new to me Danish recipe. It's chicken legs roasted on potato slices. I decided to toss in a Santiago cilantro & lime sausage, just because I had one. It was delicious. That will definitely go on the repeat list. I also made a new batch of vinaigrette and had some of it on a salad of romaine lettuce, celery, radishes, corn kernels, red onion, and lots of parsley. I'm stuffed. I had a chicken thigh and half of the roasted sausage.

Cheese tortellini with hot sausage crumbles, kale, onion, and garlic.

A nice change from a tomato based pasta.

Aside from the kale sounds great - I'm really off of tomato based anything lately. Don't know why. Unless it is strictly straight up spaghetti and sauce.

Supper was the last of the breaded fish and the last of the frozen fries out of the freezer.

Won't be buying that style of fish ('Jane's English Style') as the breading was far too thick and almost gluey. I've had her fish before (Beer Battered & others) and have always enjoyed but not this time. For some reason, even baking at a higher temp for awhile, then lower and longer, didn't seem to help.
 
I just had a grilled cheese sandwich and some chips. I'm wishing I would have had some pizza dough rolled out and covered with loose breakfast sausage meat, mozzarella, oregano and onion flakes.

I assume the sausage meat is pre-cooked?

No. It cooks inside the dough and the cheese melts. We buy small chub (1 Lb.) of loose sausage meat and go with that.

It's a quick and easy recipe. A pound package of fresh pizza dough, a 1-pound roll of breakfast sausage, a pack of shredded mozzarella, some dried oregano and onion flakes.

Hmmmm, I didn't think the sausage would cook completely that way. That is definitely something I have to make... but with some Texas breakfast sausage. :ROFLMAO:

Thanks Andy. It sounds delicious. Doesn't the meat and stuff fall out? I tried making a stromboli once and that was what happened.
 
I went to Safeway and grabbed some tostadas and then got a couple sides of refried beans from the Mexican restaurant. So I've been eating tostadas with refried beans and cheese for a couple days now. I ate this Friday, but I also ate them on Thursday. Yeah, you don't want to come near me right now. But it was good.

I just can't make refried beans the way the restaurants do.
