Potato dumplings with Trevisano chicory and gorgonzola (blue cheese)

for 4 persons:

500 gr of potato dumplings,
200 gr (more or less) of gorgonzola,
1 head of T. chicory,
1 tropea onion (in subtle bits).

Cut up the T.chicory and separate the white part (more hard). Put the latter in 500 ml of water (little salt) and to boil for 15 minutes (this is our broth).
Then in a soup pot (spacious) put the onion, with about 30gr of butter. Not overcook!! add the chicory (red part) and cook for 15/20 min. It must be withered.
Add a little bit of broth and the cheese. When the cheese is melted add the potato dumplings and 1spoonful of broth. Cook for a few time (when the broth evaporate the course is ready to eat!).
