Slice the portabello mushroom, grill it on the panini grill, remove mushrooms, brush outside of bread or roll with olive oil, layer mushroom , cheese . You can add other ingredients too. grill til cheese is melted.
sounds delish, LadyCook!! I love grilled portobellos.......mozzarella or Swiss sounds good to me.......so does grilled eggplant, fresh sprouts, tomato and shredded lettuce.......fresh onion when hubby does see me sneak them in and of course a few jalapenos---gotta to Texanize it........
