I made Goodweed's recipe last Sunday, as well as this morning and, without any exaggeration, these are the best pancakes I have EVER eaten, or certainly made.

Goodweed, Just wanted to let you know that I finally tried your pancakes, man are they great!! Everyone in the house (5 of us) tried and it was big thumbs up across the board. This is definitely a keeper. I'm going to make these pancakes next time my brother is in town. He LOVE LOVES pancakes. And then to be mean, I'm not going to give him the recipe. hahahaha
I can't say that these are the best I've tried... they're up in the top three (mom's and IHOP both figure in there too...) but these are definately the best I've actually MADE.
Something I learned about these... the batter lends itself well to making LARGE pancakes. Not your normal 5 inchers... we're talking 9 inch, take up a whole plate by themselves, monster pancakes.
Had more than I thought left in the bowl when I decided to finish it off... and wound up with a pancake that pretty much filled the skillet I was working in. But having some boy scout camp cooking experience (the kind where it doesn't matter if you miss the pan a few times) I managed to get the thing flipped with only minimal splatter (and I'm not talking spatula flip either, whole hog full pan flying pancake flip). Managed to impress myself.
Mine also turned out a lot thicker than I would have given them credit for. somewhere between 1/2 - 3/4" in the center of each. Easily thicker than any other pancake I've had. Makes me wish I had something other than regular old store-bought faux-maple syurp to put on em.
Just wanted to post that I made these today and they were great! My husband really enjoyed them as he likes fatter pancakes and said they were the best he'd eaten.
Thanks for the great (and easy) recipe. I wanted to make pancakes so came on here and went looking for a recipe that I could make with things I had at home and I ended up here.
Sounds pretty close to this irresistible sourdough recipe:
1/2 c. sourdough starter
1 c. flour
1 egg
2 Tbsp. oil
1/2-3/4 c. milk
1/2 tsp. salt
1/2 tsp. soda
2 Tbsp sugar
Put the sourdough in second to last and then add the soda right before you begin cooking it. Soda and sourdough react resulting in something similar to baking powder but starts doing so instantly. A good variation is to split the flour 1/2 white 1/2 wheat.
Thinner is better in this recipe. Very reactive and raises a great deal. Too thick and it's burning before it cooks through.
You want the starter to be pretty active...right about peak. I tried after splitting out the bread bit and adding flour and water for feeding....turned out flat. Don't do it. So if you're pulling out of the fridge do it the night before definitely. Good breakfast on a bread cooking day.
Goodweed, it's probably been 6 years since I first saw this recipe and I have been been meaning to try it ever since, due to a shortage of waffle ingredients I tried this morning. They are good. Aunt Jemima has lost another loyal follower.
my fave pancakes at present are from Kansas Seal Multi Grain pancake mix. I made the basic recipe using buttermilk, and wow! I picked up a sack of the mix in Baltic Ohio at the mills, but luckily one can order them online too from Kansas Online.
Are thiese the same pancakes you've posted before? If yes, I've made them and they were ok, but by far not as good as buttermilk pancake I make. Out of the whole family only my wife liked them, kids said that they were okay, but ask me to make mine next time. But one should never argue about taste. To each his own, or whatever the saying is.
Hi Goodweed, remember me? I spend the summer in Traverse City, MI and I've told you many times that your pancake recipe that I've been making for a couple of years now, is still the best one I've ever made. My grandkids (teens) agree and they know the difference. As for your "copyrighted" cookbook, I gotta tell ya, I've given your recipe to a lot of people both on and off the internet for some time now. Didn't know you could actually copyright a recipe.
I enjoyed these Pancakes (GW's original World Famous) this morning for the first time!!! Mostly with just melted butter and a little Steen's syrup! Wow!! Very Good!! Thank's GW. I look forward to browsing through your entire CD collection of recipes!!
I didn't have enough of our usual pancake mix when I planned brunch today. Found this recipe and made up the batter. It cooked up nice and light. I don't think I'll be buying pancake mix anymore! Thanks Goodweed!
1 egg
¾ cup buttermilk
2 tablespoons melted butter (cooled)
2 tablespoons sugar
½ teaspoon salt
½ teaspoon baking soda
1 cup flour
½ cup fresh or frozen blueberries (optional)
1. Beat egg in large bowl with wire whisk until well blended.
2. Add buttermilk and mix well
3. Add melted butter and mix well.
4. Add sugar and salt and mix well.
5. Add baking soda and mix until just blended in.
6. Add flour and mix until just blended in; batter will be lumpy.
7. If batter seems rather thick, add a little buttermilk to thin it.
8. Add blueberries, if using.
9. Heat griddle or large frying pan over moderate heat, and grease lightly.
Use about ¼ cup of batter for each pancake, turning once only.
