Mocha Black Forest Cake

2 cups sugar
1 3/4 cup all-purpose flour
3/4 cup cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
1 teaspoon vanilla
1 teaspoon Kahlua
1 cup strong hot coffee
1 can cherry pie filling
1 large container Cool Whip
Chocolate shavings

Preheat oven to 350 degrees. Grease and flour two 9 inch round cake pans. Combine dry indgredients in large bowl. Add eggs, milk, vanilla, oil and Kahlua; beat on medium speed 2 minutes. Stir in coffee (batter will be thin). Pour into pans and bake for 30 to 35 minutes or until done. Cool 10 minutes in pans and then remove to cooling rack. Cool completely. Place bottom layer on serving plate. Spread a thin layer of Cool Whip on cake layer. Add 1/2 can cherry pie filling and spread over layer leaving about an inch on the edges. Place top layer on filling and spread rest of Cool Whip on top and sides of cake. Top with remaining cherry pie filling allowing some of the filling to drizzle down on sides of cake. Top with small amount of chocolate shavings.

I would so kiss you if you were here right now. I needed a cake recipe for tomorrow and was having a (minor) snit that nothing was looking good. You come through once again! Thank you!
