This is something easy to do with leftover chicken or turkey.

2 cups diced chicken or turkey

8 ounces sour cream

1 can cream of _________ (your choice, I use mushroom or chicken) soup

1/2 dozen round buttery crackers

Cooked peas and or carrots (optional)

Mix sour cream and soup. Stir in chicken or turkey and veggies (if using). Put in a baking dish and crumble crackers on top. Bake at 350* for 30 minutes.
 
I have a lot of turkey that I can use that recipe for. Thanks for posting. We only ate a bit of the breast on a 12 lber so I put all the meat and the broth in the freezer.
 
This sounds good. And it would be quick and easy for after church or after a long hard day at work.
