ISO: Nigerian Rice Pancake recipe

I've been researching African recipes for the company for which I test drive recipes/develop recipes. This recipe caught my eye...

Wondering if anyone has made it with brown rice or basmati rice. Thinking of giving it a whirl with wild rice (which isn't a rice). And, does one really have to soak the rice for that long?

Never made it, but my guess is that soaking the rice that long allows some of the starch released to be broken down into sugar so that it can be metabolized by the yeast.

For that reason, I don't know if wild or brown rice would work the same way, since some of the starch is bound up inside the kernel. That's just a guess, though. I would think basmati would work fine.

Are these anything like the Injera (ethiopian pancakes)? They are sometimes made with rice but more usually teff which is more nutritious. The grains is ground before using though instead of using cooked whole grains. Totally delicious!
