ISO help/advice making chow mien

Hi. I am playing with making chow mein. I think I might have gone overboard a bit with the spices and proportions here
200g chicken breast (for 2 people)
100g bean sprouts
15g light soy sauce
20g Oyster sauce
30g Black bean sauce

Secondly. I used to love the vesta cohow mein wich I beleive is still available. They had a flat chrispy noodle that you would deep fry. Any ideas on what these are?
