If you immerse winter squash like pumpkin (or potatoes or sweet potatoes) in water when you cook them they will be a little more wet, inside and out.
If you keep the winter squash like pumpkin above the water level, with a little rack, it essentially steams it and it will stay drier.
In the article below it recommends roasting the pumpkin, then puree it.

I don't have one and haven't done it but basically yes. Search and you will find lots of guides for it.

thanks bliss, now seeing your post I realize, of course I have done it many times! Just not exactly with pumpkin per se but most other winter squash. Easiest way to cook it is to bake/roast them in the oven.
 
Bliss is spot on. If you really want a real replacement for canned, roast it so that you dry it out and make it into a paste. A pressure cooker will give you more an applesauce texture.
