We had beef steak for supper this evening and there was quite a bit left over. I have a pretty good immagination of my own but I'd like to get a few ideas from you folks on what to make with the leftover meat.
 
Steak and eggs for breakfast.

Steak and cheese sandwiches for lunch.

Steak fajitas for dinner.

Beef Tips over Rice
Pepper Steak
Beef Stroganoff
Chile and Beans
Beef and Potato Burritos (w/chile-con-queso on top)
 
Jaques Pepin did this with leftover beef: ( its a casserole)

Slice your beef thin, saute some onions til browned, add beef stock and cook til the meat falls apart, then add the beef and stock to a glass casserole dish, add mashed potatoes on top, a bit of butter and bread crumbs on top of the potatoes, and bake for about 30 minutes on 350.
 
slice it thinly, lightly coat in flour, saute with onions, garlic, etc, add a little water to the skillet and simmer till you have a 'gravy' and then serve over sourdough bread as an open-faced sandwich.
 
That sounds really good amber. I've done something like that before with beef stew over mashed potatoes and you talk about good. Mmmm. And the family loved it.
