Cous-cous Al Fresca

Ingredients:
1/2 cup extra virgin olive oil
1/4 cup cider vinegar
4 t. sugar
2-3 garlic cloves
salt/pepper
lemon slices
cous-cous, cooked
chopped tomatoes
chopped cucumber
chopped schallots

Mix together first 5 ingredients to make salad dressing. Add lemon slices. I try to let this mixture sit for a few days. Marinate the tomatoes, cucumber, and shallots in dressing leaving out on the counter for an hour or 2. Mix vegetables with some of the dressing into cous-cous.
 
This sounds good.. but how much Couscous do you use?
How many tomatoes, cucumbers and shallots? how many lemon slices?

Would love to try it. Seems like it would be a great summer dish!
