According to your profile, you live in Iraq (or rather, Kurdish Iraq). Can you be a little more specific about the types of cookies you like?

Also, I don't know what sugar substitutes you have available to you in that part of the world. For example, are you able to buy stevia where you live?

One other suggestion I would make. Wheat flour can have just as much of an impact on your blood glucose as granulated sugar. You might look for recipes online that use nut flour or coconut flour. I like almond flour myself, and almonds are widely available.
