what sauce??

Hi all

im doing chicken in parma ham tonight. I always stuff them with mozzarella, basil and a small touch of garlic
Mistake last week was i served them with potato Gratin with cheese and cream so it was way to rich and i couldnt even eat half. Tonight Im cooking this dish for my inlaws and i want to serve with a light sauce some roasted veg and potato's.

Just dont want a rich sauce though. something light

any ideas??:LOL:
 
You can't go wrong with white sauce AKA country gravy.

2 TB oleo or butter or bacon fat (mmm)
2 TB flour
2 C milk

Melt butter, stir in flour, gradually stir in milk. Thicken, add S&P
I made country gravy to go with the LO chicken livers. I added 1 TB dried green onions and a sprinkle of garlic powder. Or try it seasoned with some dill.
 
The dish is good enough it doesn't really need a sauce! How about drizzling it with a little pesto?! Failing that, a tomato based sauce would be fine.
