This is wonderful with a pork roast studded with garlic, a jicama and orange salad...
preheat your oven to 350 ...Saute 1 chopped white or yellow onion in 3 Tab. butter til soft but not brown. Stir in 1 c. long grain rice.add 2 c. chicken stock,1c. white wine and 1/2 of a jalapeno diced very fine. Bring to boil and then transfer to ovenproof casserole. Cover and bake 15min or til liquid is absorbed. Remove from the oven.
Increase the oven temp. to 400
Transfer rice to a bowl and 1 red bell pepper chopped, 1 yellow bell chopped, 1/2 c. chopped celery,1-1/2 c. sour cream plus 1/2 c. each shredded swiss and cheddar cheese. Spoon everything into a buttered casserole bake uncovered 20 min. or til golden.
