This grilled sandwich is great with just a plain mustard vinagrette but add some anchovies mashed,honey, white balsamic and several of your favorite herbs here is what I add to make the vinagrette. 2 tab. Dijon or less if you find it too strong, 1 shallot minced, 2 garlic cloves crushed, 1-tea each thyme and parsley leaves salt, fresh ground pepper 4 tab. fresh squeezed lemon juice and1-1/2 cups evoo. keep refrigerated will keep if covered in fridg for up to a week. I grille 4 chcicen breasts salt and pepper them. split 4 french rolls, and 2 cups of arugula or mesclun put the grilled chicken on the rolls I like to butter them put them on the hot grill for a few min then add a chicken breast douse it with the mustard vinagrette add your greens and if you like some then sliced red onion and a mashed then slice of avocado mush together, cut in half eat and enjoy.
